It's Bisonic

While not getting into the conversation that led me to this line of questioning, last night Lars and I wondered about bison or buffalo barbeque. As bison have become domesticated animals raised for meat (mmmm....buffalo burger), has anyone made the leap to bison barbeque?

A simple Google (buffalo barbecue and bison barbecue)search revealed these results:

These folks in Vermont have been grilling buffalo and beefalo ribs. While it's not really barbeque, and not where I expected to first find my hit (I expected Montana or Wyoming), it's a promising start.

On the other hand, these folks in Nebraska really know what barbeque is and they look like they know how to host a dance program. The Hastings Museum is had a barbeque (bison picking?) and hosted the Kevin Locke Native Dance Ensemble.

In July, Grand Lake, Colorado will be having their 59th Annual Buffalo BBQ Celebration. There is no indication whether the bison is actually 'que (barbecue is a noun, after all)or just grilled bison burgers, but it sounds exciting all the same.

In Missouri, there is Bison Fest scholarship fund raiser. Again, not indication of whether the barbeque listed is the slow-cooked variety or just the kind tossed on the grill, but it's a hopeful sign.

And, this ranch in Wyoming had more of what I had in mind--a restaurant in bison land specializing in bison barbeque.

From American Gourmet, you can get bison simmered in their barbeque sauce. While this sounds tasty, I think it is a call to arms to all those folks who live where Rocky Mountain Oysters and Buffalo Jerky are plentiful--bison is ripe for the 'que and there is a hole in the market.

We need bison barbeque! I expect there to be a restaurant like Bullocks or Lexington Barbecue somewhere in Montana, Wyoming, Colorado, or Idaho next time I'm out that way. There are already restaurants with a Southern leaning (the number of fish farms in Idaho make Southern-style fried catfish and hushpuppies popular), the 'que is clearly the next frontier!

PS: I do know the difference between bison and buffalo. Technically, those hulking beasts that Europeans used to kill for their skins, leaving nasty rotting carcusses littering the plains, are bison. Buffalo are the water variety found is more exotic places than the Great American Plains.

They sell bison/buffalo burgers at a few joints up here. But I've never seen bbq versions.
